20 Days Until Thanksgiving





It's official. There is now less than three weeks until Thanksgiving. Continuing with my "Countdown to Thanksgiving", I am featuring a really easy, really tasty salad that's sure to please. Don't be fooled by the sour cream! This salad is wonderfully sweet without being "too sweet". And most people never guess that the creaminess of this salad comes from the sour cream.


Ambrosia Fruit Salad




Serves:  8 - 10

1 - 20 oz. can pineapple chunks, drained

1 - 15 oz. can fruit cocktail, drained

1 - 15 oz. can Mandarin oranges, drained

2 cups miniature marshmallows

1 cup flaked coconut

1 cup chopped or sliced nuts (I prefer walnuts or almonds)

1 - 8 oz. container sour cream


In a large bowl, combine the pineapple, fruit cocktail, oranges, marshmallows, coconut, and nuts. Gently fold in the sour cream. Cover the bowl and refrigerate for at least one hour. Stir before serving. 

If you plan to serve this salad as individual servings and would like to dress each serving up a little bit, you can add a maraschino cherry to the top or serve the salad on a lettuce leaf.

This salad can be made a day or two ahead of schedule, but add the marshmallows on the day you plan to serve it for best results.
